Polish cuisine is famous for its meaty and savory flavors. But what you might not know is that they make incredible desserts too.

You might have heard or tried the Polish Szarlotka, commonly known as apple pie, or their creamy Sernik, the Polish version of Cheesecake. However, today you will learn how to make a mouth-watering Polish Cake.

There are many recipes online and in cookbooks that you could easily follow, but the one we found thanks to the YouTube channel, The Perfect Refuge (Il Rifugio Perfetto), will make you not to want to share this cake with anyone else!

This recipe is quick and low budget, which means that you can easily put it together whenever you feel like having a slice of a delicious cake with your coffee.

You will need the following ingredients to make this “wonderful Polish Cake”.

For the dough:

  • 150 grams of flour or (1 + 1/2 CUP)
  • 100 ml of water or (1/2 CUP)
  • 100 ml of milk or (1/2 CUP)
  • 80 grams of butter or (1/3 CUP)
  • 4 pieces of eggs
  • 1 teaspoon of baking powder
  • 1/2 teaspoon of salt

For the cake’s cream:

  • 500 ml of milk
  • 150 grams of sugar or (1 + 1/2 CUP)
  • 100 grams of flour or (1 CUP)
  • 2 pieces of eggs
  • 180 grams of butter or (3/4 cup)

Now it’s time for some baking! Follow the step-by-step instructions to make this amazing cake. First, you will need to prepare the dough. Melt 80g of butter in a deep cooking pan. Once the butter is melted, add 100ml of milk, 100ml of water, 1/2 teaspoon of salt, whisk the mix lightly and then wait until it boils.

In the meantime, put in a bowl the 150g of flour and 1 teaspoon of baking powder, then mix well. Once you see that the wet mixture above starts to boil, add this dry mixture. Stir thoroughly and when the dough stops sticking to the pan it means you are set!

Now, make sure to preheat the oven to 400℉. Transfer the dough into a mixing bowl and let it cool. Once the dough is a bit cooler, add the eggs. Add 1 egg at a time and make sure to mix it with the dough well.

The time for the baking is approaching, you will need to prepare a 25cm pan, buttering it thoroughly or using parchment paper/baking paper at the bottom. First, pour half of the dough for the first layer of the cake. With a spatula make sure to spread it well and then bake it in the oven for 20 minutes. Better to put it on the medium-low part of the oven. Repeat this step for the other half of the dough or the second layer of the cake, then set aside.

Now, you will have to prepare the cream. You will need to beat 2 eggs and then add 150g of sugar, mix them well. Then add 100g of flour and 500ml of milk, stir well, and then bring the mixture to a boil, don’t forget to occasionally stir. Once the mixture begins boiling, let it cook for about 3 minutes. Once done, cover it and let it cool.

In order to finish the cream, mix 180 – 200g of butter in a mixing bowl, using a hand mixer. Then add a portion of the cream at a time, repeat this procedure until the entire cream mixture is used.

Put the first layer of cake back into the pan, then pour and spread on top it the cream mixture. Add the second layer of cake on top and put it in the fridge for 2 hours.

After 2 hours have passed, you can take the cake out from the fridge and you can add any topping you like, such as some icing sugar. Your cake looks delicious, enjoy!
