Not everyone is a chef, nor do we all have the time to be one in the kitchen. Ingredients can be expensive, some recipes can be daunting, when all we want are easy to cook but still delightfully good meals. We’re talking cost effective and simple.

She is a working mom, so imagine how full her hands are.

So here are five of her recipes which you can do at home. All you need is a crock pot with some confidence and off you go!

Abby knows what she’s doing. She has to balance her time what with all her responsibilities at home and at work. Naturally, this wonder mom found ways to cut costs wherever possible without sacrificing the quality of her meals. They are delicious too!

Her chosen recipes here use a variety of meats just so you get the idea that you can work with anything and not get bored with the same ingredients. Also, they use as few ingredients as possible while still remaining tasty. Let’s begin.

1.) Ranch Tender Roast

Ingredients:

  • 1 tender chuck roast
  • 1 packet of ranch dressing
  • 1 packet of onion soup mix
  • 1 stick of butter
  • 1/4 cup of water
  • 1 Poblano pepper

Drizzle a little bit of olive oil on the bottom of your pot. Just enough to coat and make sure nothing sticks. Then… drop all the ingredients in.

Let the beef go first then add the stick of butter on top. Up to you how much butter you want. Take the packets of ranch dressing and onion soup mix and just sprinkle them on top.

Wash the Poblano pepper, remove the seeds, then cut them in to large strips for that extra flavor. Arrange them around the beef then pour water on the bottom of the pot around the meat. Cook this on HIGH for around 4-6 hours.

The meat should be tender. That’s when you know it’s good. Shred it and serve with rice or in a bun. Or why not chips?

2.) Meatball Subs

Ingredients:

  • 1 pack of frozen meatballs
  • 2 24 ounce cans of spaghetti sauce

This could possibly be the easiest one here. See how Abby uses a pot liner to make clean ups easier? All you have to do is throw in the frozen meatballs with the 2 cans of sauce, mix it well to make sure the meatballs are covered with sauce, then cook on LOW for 8 to 10 hours.

What goes well with this? Cheese. Lots of it. So help yourselves when you pair this with a bun!

3.) Sausage and Potatoes

Ingredients:

  • 3 russet potatoes
  • 1 pack of sausage links
  • 1 frozen pack of green beans (or canned)
  • 1 cup of water

Chop those russet potatoes in to about an inch per piece. Put some olive oil in the pot then toss those chopped spuds in.

Cut up the sausages at about the same size as those potatoes. Layer those on top followed by the green beans. Set the pot to cook on HIGH for around 4-6 hours making sure the potatoes cook. Stir it well then plate and decorate!

4.) Crack Chicken Sliders

Ingredients:

  • 1 pound of chicken
  • 2 blocks of cream cheese
  • 1 packet of ranch seasoning
  • 1/4 cup of water

Fit that chicken well in to your crock pot. Once done, put the cream cheese on top then sprinkle that packet of ranch seasoning with the 1/4 cup of water after in to the bottom of the pot. Set it to HIGH and let it cook for 4-6 hours.

Done? Take the chicken out of the pot and shred it on a bowl. Mix in some of the juices from the pot and mix it in with the chicken and cream cheese just to make sure it’s not dry. This goes well in a bun. Add in some of your more preferred toppings too!

5.) Salsa Chicken

Ingredients:

  • 1 pound of chicken
  • a jar of your favorite salsa
  • 1 can of black beans
  • 1 can of corn
  • 1 packet of taco seasoning (optional)

Drizzle some olive oil in to the pot. Then just take the chicken and all the other ingredients and put them all in. You read that right. This one takes longer. 4-6 minutes on HIGH.

Shred the chicken with a fork then serve it over rice. If you want to use the taco mix, do so!

Not into rice? Use tacos. Works well!
